Servings: 12
Ingredients
Mashed Banana: 1 cup (about 2-3 bananas)
Salvare Hemp Protein Powder: 1/2 cup
Whole Wheat or Almond Flour: 2 cups
Coconut Oil or Butter, Melted: 1/3 cup
Honey or Maple Syrup: 2/3 cup
Large Eggs: 2
Vanilla Extract: 1 tsp
Baking Soda: 1 tsp
Salt: 1/2 tsp
Optional: 1/2 cup of mix-ins like dark chocolate chips (Not Paleo), walnuts, or blueberries.
Instructions
Preheat Oven: Set your oven to 375°F (190°C). Prepare a muffin tin by lining it with paper liners or lightly greasing it.
Dry Ingredients: In a large bowl, whisk together the flour, hemp protein powder, baking soda, and salt.
Wet Ingredients: In another bowl, mix the melted coconut oil (or butter), honey (or maple syrup), eggs, mashed bananas, and vanilla extract until smooth.
Combine: Pour the wet ingredients into the dry ingredients and stir until just combined. If using mix-ins, fold them in now.
Fill Muffin Tin: Divide the batter evenly among the muffin cups.
Bake: Place in the oven and bake for about 20-25 minutes or until a toothpick inserted into the center of a muffin comes out clean.
Cool & Serve: Allow muffins to cool in the tin for about 10 minutes before transferring them to a wire rack to cool completely.
Paleo-Friendly Tweaks: Make this recipe Paleo-compliant by opting for almond flour and using a Paleo-friendly sweetener like raw honey. Additionally, swap out the optional dark chocolate chips for a Paleo-friendly brand or use cacao nibs.
Spice It Up: For an extra flavor kick, consider adding a pinch of cinnamon, nutmeg, or cardamom to the dry ingredients. Spices can add another layer of complexity and health benefits, such as antioxidants.
