Banana-Hemp Protein Muffins

Ingredients

  • Mashed Banana: 1 cup (about 2-3 bananas)

  • Salvare Hemp Protein Powder: 1/2 cup

  • Whole Wheat or Almond Flour: 2 cups

  • Coconut Oil or Butter, Melted: 1/3 cup

  • Honey or Maple Syrup: 2/3 cup

  • Large Eggs: 2

  • Vanilla Extract: 1 tsp

  • Baking Soda: 1 tsp

  • Salt: 1/2 tsp

  • Optional: 1/2 cup of mix-ins like dark chocolate chips (Not Paleo), walnuts, or blueberries.

Instructions

  1. Preheat Oven: Set your oven to 375°F (190°C). Prepare a muffin tin by lining it with paper liners or lightly greasing it.

  2. Dry Ingredients: In a large bowl, whisk together the flour, hemp protein powder, baking soda, and salt.

  3. Wet Ingredients: In another bowl, mix the melted coconut oil (or butter), honey (or maple syrup), eggs, mashed bananas, and vanilla extract until smooth.

  4. Combine: Pour the wet ingredients into the dry ingredients and stir until just combined. If using mix-ins, fold them in now.

  5. Fill Muffin Tin: Divide the batter evenly among the muffin cups.

  6. Bake: Place in the oven and bake for about 20-25 minutes or until a toothpick inserted into the center of a muffin comes out clean.

  7. Cool & Serve: Allow muffins to cool in the tin for about 10 minutes before transferring them to a wire rack to cool completely.
